Here he serves dishes from across Italy's 20 regions at their purest, simplest and most delicious. The site was derelict for ten years before the restaurant was built (formerly Charlie Chester's Casino), allowing a full rebuild - the restaurant was constructed around the menu, with dedicated bread-making, pasta-making, sausage-making and salame-curing menus. Everything is done by hand, the old, slow way, and staff and customers together seem to be made very happy...
